These Peanut Butter Cups are a huge hit with my non vegan family and they disappear fast...like magic (recipe from http://thekindlife.com/
Don't let the word vegan fool you, this is delicious and you don't need to buy many vegan ingredients.
Ingredients:
*1/2 cup Earth Balance Butter
*3/4 cup of crunchy peanut butter (preferably unsweetened and unsalted)
*10 graham cracker squares, crumbled into crumbs (will be 3/4 cups once crumbled)
*1/4 cup maple sugar or other granulated sweetener
*1 cup of chocolate chips (or non dairy chocolate chips)
*1/4 cup soy,nut or rice milk
*1/4 cup chopped pecans, almonds or peanuts
Directions:
1. Line a 12 cup muffin pan with liners, set aside
2. Melt butter in small saucepan over medium heat
3. Stir in peanut butter, graham cracker crumbs, maple sugar and mix well. Remove from heat.
4. Evenly divide the mixture among the muffin cups (approximately 2 tablespoons per liner)
5. Combine chocolate and milk in another pan, stirring over medium heat until chocolate melts
6. Spoon chocolate evenly over peanut butter mixture
7. Top with chopped nuts
8. Refrigerate for two hours before serving
